5 Fall Treats: My Favorite Pumpkin Recipes

One of my favorite things about fall is pumpkin. I love pumpkin pie, pumpkin cookies, pumpkin ice cream, pumpkin bread, and pumpkin milk shakes. This list goes on and on.  And if you add chocolate to a pumpkin treat…well that’s even better! Next week I have two reasons to celebrate. October 26 is National Pumpkin Day and the 28th is National Chocolate Day!  In honor of both, I am sharing a few of my favorite pumpkin treat recipes with you.

Soft Pumpkin Chocolate Chip Cookies

I made these a few weeks ago when the pumpkin bug first hit me. I was lucky to have a can of pumpkin in my cupboard because I went to three different stores for more and they were all sold out! It seems I’m not the only one with a pumpkin treat problem. The cookies were gone in less than 24 hours. My kids loved them, but I’ll admit I ate more than my fair share.

3-Ingredient Pumpkin Pie Angel Food Cake

You read it right…three ingredients.  This calls for a box of angel food cake mix, a can of pumpkin and pumpkin pie spice. You’ll need more ingredients if you want frosting, but the basic bake is delicious all on its own. I have tried a pineapple version with crushed pineapple instead of pumpkin and it’s works great too. I would recommend eating this quickly as it does get soggy after a day or two. That shouldn’t be a problem if you like pumpkin treats the way I do!

Pumpkin Coffee Cake

My son loves coffee cake and I love all this pumpkin so when I discovered this recipe from www.bunsinmyoven.com earlier this month, I knew I had to try it. I’m telling you, you need to try it too. It fills a 9X13 pan with pumpkin goodness.

Chocolate Chip Pumpkin Pound Cake

I love pumpkin, pound cake and chocolate so this recipe is perfect for me. It only take 1.5 hours to make and then I can indulge in three of my favorite fall things at once.

Pumpkin Chocolate Chip Bread

Last but not least, my easy go to for after-school snacking or taking to friends and neighbors. I usually use my zucchini bread recipe and substitute pumpkin for the zucchini. It calls for chopped nuts, which we all know is code for chocolate chips instead!  This recipe is from www.deliciouslysprinkled.com and it similar. Actually, true confession, it’s better because it’s more moist. I think it’s the pudding and extra egg. So you can use this recipe or your zucchini bread recipe, just don’t forget the chocolate chips.
